Quality at grain level
Rice that has just been harvested and properly dried is not yet ready for consumption. The grain is, in fact, covered by multiple protective layers, making its appearance quite different from what the consumer is accustomed to.
In botanical and commercial terms, the outer coating consists of several parts
- Glume (called "hull" in commercial terms), which protect the grain on the outermost layer;
- Pericarp and aleuronic layers, also known as bran and endosperm, which give brown rice its nutritional content;
- Germ and endosperm, the heart of the rice, which, after processing, becomes the white rice ready for cooking.
