Rice processing

Behind every grain of Riso Morgante rice lies a careful process, the result of experience, passion, and attention to quality. Cleaning, de-hulling, whitening, and packaging are key stages where artisanal tradition and cutting-edge technology come together to preserve the grain integrity and enhance the unique characteristics of the rice cultivated in the Baraggia region, in order to offer you a genuine, safe, and high-quality product every day.

  • Cleaning and de-hulling

The industrial process of transforming raw rice into edible rice begins with cleaning, which removes impurities such as straw, stones, soil, and foreign seeds. This operation is performed by a machine called a tarara.
Next is de-hulling, carried out by huskers (or hullers) which, through rubbing, remove the silica husks, resulting in whole rice. This step is very delicate because it must be done carefully to avoid breaking the rice, which is still fragile at this stage. The machine used is also known as a de-huller. After de-hulling, the semi-rough rice passes through the paddy, which separates the grains that are still in the husks and sends them back to the de-huller. Due to the presence of lipid and protein elements not yet removed, this type of rice should be stored in vacuum packs or at low temperatures to prevent rapid deterioration. A by-product of this process is green rice (small or immature grains), obtained through small-hole sieves, which is mainly destined for livestock feed.

  • Whitening and optical separation

Whitening involves the removal of bran, germ, and broken rice from semi-rough rice using specialized machines called whitening machines. The process works as follows: rice is fed into the space between two concentric cones, with the inner cone rotating and equipped with an abrasive surface. Through rubbing, both the germ and the bran are removed.
This stage in followed by the separation of “breakages”, or broken grains, which are removed using indented cylinder separators. Finally, the rice undergoes an additional optical sorting process, during which grains with a different colour from the standard are identified. The defective grains are automatically discarded using jets of compressed air.

  • Product Packaging

Once the processing is complete, the rice is ready for packaging, carried out according to high-quality standards to ensure freshness, safety, and traceability of the finished product.
The final stage involves packing in various formats: paper bags packed in cardboard boxes, cloth bags of  2, or 5 kg and 1 kg, 2,5 kg or 5 kg pillow bags, in bundles. Automatic dispensers deliver precise amounts of rice, which are then sealed through stitching or heat sealing, depending on the type of packaging.
To meet the growing demand for long-lasting solutions, the company has also introduced vacuum packaging, which provides maximum protection against oxidation and extends shelf life without the use of preservatives.
Although this type of packaging requires more durable materials and a more precise process, it adds a qualitative advantage that enhances the product and makes it suitable even for more demanding markets.
